There are so many iterations of cobblers, particularly with berries. What I love about cobbler is you can use up the berries in your fridge, or you can pull berries from your freezer. Living in the Willamette Valley of Oregon, we have easy access to some incredible berries through the summer months. Strawberries are in season at the beginning of summer, blueberries and raspberries follow, and blackberries come into season at the end of the summer.

Prep Time : 10 minutes
Bake Time : 40 minutes
Ingredients :
Berries
5 cups of mixed berries, washed and prepared. I leave all of the fruit whole, except for Strawberries - which I either cut in half or quarters, depending on the size of the berry.
1 teaspoon lemon zest
1 tablespoon lemon juice
1 teaspoon vanilla
1 teaspoon cinnamon
1/2 teaspoon cardamom
1 1/2 cups sugar
Cake
1 1/2 cup all purpose flour
1/2 cup sugar
1/4 cup brown sugar
1/3 cup rolled oats
1 1/2 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon cardamom
5 tablespoons salted butter, cold, cut in small cubes
2/3 cup whole milk
Tools Needed :
STEP ONE
Preheat your oven to 375 degrees F. Prepare your berries by washing them and cutting your strawberries.
STEP TWO
Combine your berries, sugar, vanilla, cinnamon, cardamom, lemon zest and lemon juice in a bowl.
STEP THREE
In a separate bowl, combine the flour, sugar, brown sugar, oats, baking powder, cinnamon, and cardamom. Mix.
Add your butter and milk. Mix to combine.
STEP FOUR
Prepare your baking dish. I do this with butter, but a non-stick spray is just fine.
STEP FIVE
Pour your berries in the baking dish. Take your spatula and make sure to get all of your juices from the bowl into your baking dish!
STEP SIX
Place your cake batter in small drops on top of your berries. Try to keep your batter roughly the same size so it bakes evenly. You could use a cookie scooper, but I just use my hands.
STEP SEVEN
Place your cobbler in the oven. Bake until the berries are bubbling and the cake is lightly browned. This should take between 35 - 40 minutes.
Serve with fresh whipped cream, or ice cream. Vanilla ice cream is a classic, or switch it up with fresh Strawberry ice cream.
You can easily prepare this in advance, just reheat in your oven at 350 degrees with foil to prevent the cake from overcooking.
