I love this quick and easy ice cream! It takes a few simple ingredients, and is very easy to make. Living in the Willamette Valley of Oregon, we have access to farms to pick your own berries or freshly picked by the farms. Strawberry season is short, so this is a special moment during the summer. Of course, it is absolutely okay to use strawberries from the grocery store too!
Makes just under 3 cups of Ice Cream
Prep Time : 20 minutes
Ice Cream Maker : 17 - 20 minutes
Ingredients
1 1/2 cup strawberries (remove tops, cut into small pieces)
1/2 cup sugar
2 tablespoons honey (I use honey from our local farm)
2 teaspoons lemon juice
1/2 teaspoon lemon zest
1 cup heavy cream
1/2 cup half and half
1 teaspoon vanilla extract

Ice Cream Maker (note: make sure you read the instructions and freeze the correct part prior to making the ice cream!)
STEP ONE
Combine your strawberries, sugar, lemon zest, lemon juice, and honey in a bowl. Let this sit for a minimum of 15 minutes. This allows the berries to release some of the juices.
STEP TWO
Mix your cream, half-and-half, and vanilla in a large bowl. Add your strawberry mixture and combine.
STEP THREE
Add your mixture to the ice cream maker. I like the this Cuisinart Ice Cream Maker because it presets the time for you. If your ice cream maker doesn't have an "ice cream" setting, it should take 20 minutes. Check it around 17 minutes. You are looking for it to be thick but still creamy.
Enjoy right away or put the ice cream in a freezer safe container and save for later.
This ice cream is delicious on its own, or serve on strawberry shortcake, berry cobbler, or cake.
